Night begins after dusk -- the period when the sun's no longer visible but it isn't dark yet.

On planets with atmospheres, yes. (Even after the sun is below the horizon, it stays somewhat light because of atmospheres' tendency to scatter light.) On the moon, which is mostly airless, it goes from day to night INSTANTLY.
