Need a menu idea for my formal dinner party!?

Update:

I host a formal dinner party every Christmas and need a main dish idea. Something that can serve about 30 people without breaking the bank but that is also different from past. I don't mind something time consuming- I like to impress.

Some previous main dishes were: penne w vodka sauce, chicken francaise, beef roast, bistro steak and lasagna bites, stuffed French toast and quiche, chicken cutlet with two types of pasta sauce, chicken piccata and last year was Thai Beef lettuce wraps.

  • I have friends over for dinner and change it up every year, usually a dinner from different countries every time. I'm a chef, and none of us have Christmas off, but turkey gets old lol. The last party I did I made paella. And no it won't break the bank but paella is always impressive, it will feed 30 people easily with other things on the side, Make some flan (creme caramel) for dessert, start with a couple of tapas, some chorizo and cheese and olives, patatas bravas, fried sardines, or whatever you think your guests will eat ( I lived in Spain, I could live off of paella and tapas for the rest of my life lol), baguette to soak up the sauce, Then you put out your piece de resistance, huge paella in the middle of the table, with seafood, chorizo, chicken, peas, lots of garlic, the only thing that will 'break' the bank on that one is picking up real Spanish saffron. The rest is pretty cheap.

Round out with some 'cheap' bottles of Spanish wine (don't have to break the bank on wine), and/or make a punch bowl full of sangria.

I'll send the recipes if you're interested. Major wow factor.

How difficult are you willing to go and who's coming? Younger people like different things than senior citizens.

Last year I added spinach to the following recipe and called it Christmas Bows. It was a big hit. We like spicy food so I used hot Italian sausage but you could do the sweet if you prefer.

If I were doing a formal dinner I might add chicken parm or roasted chicken.

What do you think of Greek food? Spinach pie might be nice.
