No, soy sauce and hoisin sauce are different in taste, texture, flavor, smell etc. Soy sauce is fermented beans in yeast, salt etc and you will get either a thin/light (runny consistency) or thick (dark, very thick consistency and sometimes sweet sauce) Soy sauce (light) is a subtle runny salty sauce with fermented beans flavor while Hoisin (in Cantonese it means seafood although no seafood is used). Hoisin is more complex than the subtle soy sauce. It is also made from fermented beans, garlic, maple/corn syrup/molasses, Chinese 5 spice powder, vegetable oil, and rice vinegar.

Soy sauce is used as a seasoning in Chinese Cooking. Hoisin sauce it like barbecue sauce and used on ribs or any type if meat you are cooking and want it to taste like barbecue. . Hoisin is thicker and Soy is thinner. Both are very high in salt and sugar.
