my buttermilk, when I buy it is lumpy?
Whenever I buy buttermilk, it pours out and has chunks in it, but whenever I see it on cooking shows, it is smooth, like milk or cream.
!) is there a difference in dairies and the way it is made?
2) do I need to run this through a hand blender or such before use?

You, my friend, are getting good high quality buttermilk. All you need to do is shake it up before you pour it. Lucky you.

You're supposed to shake it (unopened). 20 seconds should do it.
