A friend of mine is stuck in bed for the next couple of weeks.?
I want to take her some meals, which will be easy to reheat. Suggestions?

What a sweetheart! I wish you were my friend! I would make sure that you are thinking healthy because slowing down to bedridden pace from any other activity level means weight gain is almost inevitable, even if it is just a couple weeks. Keep foods comforting, easy, and sensible.
I think you should do some taco meat made of ground turkey. Prep some onion, tomato, lettuce, add some cheese and a packet of tortillas. If you make a large enough batch, you can also add a can of beans and RoTel tomatoes to your gift box, so she can turn her leftovers into chili.
Tuna pouches are easy to make wraps or sandwiches. I like mine with honey mustard sometimes instead of mayo. And tuna salad is an excellent dip for chips!
You can also make a batch of hummus out of canned chickpeas. Easy easy...a healthy dip for some veg sticks or tortilla chips.
You might also make some Italian sauce and add a box of pasta, salad items.
Don't forget drinks...some herbal tea bags, sugar free cocoa, some nice coffee or flavored creamer.
Homemade soup is super easy, even from scratch, but you can also take shortcuts to make it even easier. Broccoli cheese, minestrone with veg and pasta, chicken noodle with veg, are all hearty and healthy.
Pack a box of her fav cereal, it is an easy breakfast and not bad at all for a snack! She might also like some pretzels, triscuits, for something crunchy.
If you pack her sandwich stuff, use lean meats, whole grain bread, and plenty of veggies and healthy condiments.

Soups, chili, stews and casseroles all tend to reheat easily and still have good taste. In fact, some of them are better after the flavors have had a chance to meld.
And think comfort foods like meatloaf with mashed potatoes or even spaghetti or pot roasts with veggies and potatoes. Don't forget to take salads as well as sandwich fixings!
