    INGREDIENTS:

    1 kilo pork pata (pork legs), cut into serving sizes

    1 cup of water

    1/2 cup of vinegar

    1/4 cup soy sauce

    1 tbsp fish sauce (patis)

    3 large cloves of garlic, crushed

    2 bayleaves (laurel)

    1 tspn whole peppercorns

    1 pork bouillon cubes

    1 tbsp sugar

    ground pepper and salt to taste

    1/2 cup banana blossoms (bulaklak ng saging)

    PROCEDURE:

    1. Place the pork in a saucepan, add all the ingredients except the banana blossoms. Cover with a lid. On low heat, slowly bring it to a boil without stirring. Simmer for about 20 minutes before stirring.

    Note: Pork pata may take a while to cook. Simmer in low heat. Very slowly, but it will help to soften the meat . It pays to be patient!

    2. Once the pork is cooked, add the banana blossoms. Simmer for another 5-10 minutes.

    3. Serve with rice.

  • Try this.

    Ingredients

    1 large pata or pig’s feet (around 1 kilo)

    1/2 cup water

    1/2 cup vinegar

    1/2 head garlic, crushed

    1/2 cup soy sauce

    1/2 cup brown sugar (reduce if white sugar)

    1/2 cup dried banana blossoms soaked in water

    1 bay leaf

    4 saba bananas, fried

    Directions

    1. Clean pata throughly. Boil in vinegar, water and garlic. (or you can use the pressure cooker)

    2. Lower heat and simmer until pata is tender.

    3. Add more water if needed.

    4. Put in soy sauce, sugar, dried banana blossoms, bay leaf and bananas.

    5. Summer 5 minutes more. Serve hot.

    Follow Omniac's recipe but instead of fresh/raw pata, try using left-over lechon pata. YUMMY.
