Copha, or cremelta...or shortening,?
Can anyone tell me why you need to include it in your recipe? Can I just leave it out?
don't like the taste or texture it gives food. I am planning on making a chocolate caramel slice and for the topping, it's 60g copha and 125g cooking chocolate.

The first two items you mention sounds like brand names for a shortening.
Without really knowing what it is you are making or the recipe i can only tell you that yes you do need the shortening.
You could swap the shortening for butter or lard to get a better flavor. Margarine contains water so that might not be a better substitute.
