What do people do after being evicted?

Usually they find some slumlord that doesn't do background checks. They end up paying more than fair market value for a scuzzy rental in a bad neighborhood

Depends on an individual's resources.
Some people have friends or family who can take them in, at least temporarily. Some are able to find cheap hotels, at least until they figure out something else. Some have to find homeless shelters that can take them in. Some find storage lockers to put their stuff in then sleep in their car (if they have one). In some locations people find some place they can essentially go camping, at least in the short term.
And not everyone is evicted because they don't have money. Some have enough funds to simply find another rental, but it can be more difficult with an eviction on their record.

There are no rules or requirement for where they go to next. In one sense, they're kind of free to go wherever they're legally allowed to. They're no longer tied down to their house/apartment like they were before.
They can load up all their stuff in the car and drive to Arizona if they wish to. Maybe even to Delaware if that strikes their fancy.

Rent a room? Hotel? Roommate? Homeless shelter? Camping? live in car?

That isn't the problem of the landlord. Had the tenant paid their rent in full and on time, they would not be facing being evicted.
