I wouldn't really recommend using any type of a maple product as a substitute for chocolate chip cookies. Maple could quite easily overpower the rest of the taste of the cookies. Also most manufacturers of sugar has moved away from using bone char t filter and whiten granulated sugar with now. There are now newer and less expensive methods to filter and whiten granulated sugar with. However beet sugar does not use bone char to whiten sugar with, and is completely suitable for vegan use.

Powdered erythritol, powdered Stevia, or Swerve. All sugar substitutes.

Hard to say without knowing what you're making. Maple syrup, for example, has more water than it has sugar. If you are baking, a straight substitution will ruin what you're making.
