Regardless of who his mother is, my future son will always just simply be a younger version of me (appearance wise), right?

No, genetics is a crap shoot and you never really know what you're going to end up with.

    Wrong

Inbreeding excepted, your son will have only 23 of your 46 chromosomes, and there is no predicting or calculating which ones. His other 23 chromosomes and his mitochondrial DNA will come from his mother

    No, you are wrong.

No, not at all.  He might look a little like you - or not, and may act a bit like you - again, or not.  DNA is a crapshoot at best.  You won't know what you get until he is born, and grows up.
