Since fossil fuel power plants lost more of their generating capacity than windmills and solar did why are Cons in Texas blaming renewables?

In a word: "deflection".

That's their knee-jerk reaction to everything and everybody they perceive to be liberal.

"More" ....means, in this case ZERO.

When the fony windmills went down everyone else had to pick up the slack.

Because they did not want to blame the real culprit, their own poor design and the poor management of their private power grid.

Many northern states, which have colder winters than what Texas has seen, employ wind power and they do not have any issues.

Because they know that the wind turbines have to be winterized and maintained.

Because they failed under the cold.
