How long does medium cheddar(unopened) last in the fridge?
@curtisports2 Thank you, I'll be looking into 2-10 year old cheddars more than I just did and this Tillamook medium cheddar is unopened.
On a side note, Tillamook has a checkered past. I was looking at their 2-6 year old extra sharp white cheddar and that led me to some dark places in their recent past.

It's good until it's too moldy too eat. If mold can be scraped or cut away and doesn't run in grains into the rest of it, the rest of it is safe to eat. It may get a little dry, but that is how cheddar is aged. Ever have a taste of a good 10+ year old cheddar? It's so dry it crumbles.

If it's vacuum sealed several months, but once you open it it will go off quicker if it's that old, so I'd use it within two weeks of opening or it will start to smell of gym shoes in the worst possible way.

My Tillamook's medium cheddar use by date is Sept. 2021.I didn't know it stayed good for a year. It's aged for 60 days so it was probably packaged in September.

I don't know. I only ever buy foods that I intend eating. I've never wanted to see “how long” something will last.
Hermetically sealed, I'd expect it to last for several weeks. My best advice would be not to buy it unless it had a use by or best before date.

2 weeks?
By then, green mold starts to grow on it. Hence why we stick cheese in the freezer. Its good to have on hand but we dont use it every day.

As long as the stuff doesn't start grow mold on it. I have put cheese in the refrigerator and kept it unopened for three years. As long as it doesn't grow mold on it it won't go downhill
