Property manager claims to not receive money order rent?
Basically shes only in the office 3 days a week but shes not always guaranteed to be there so August 1st I show up to pay my rent and she's not there so August 5th I show up again and shes still not there and after the 5th theres lates fees slapped on
So as much as i dont trust the boxes I put my money order in the drop box on the door hoping it wouldnt be counted late whenever she got in the office
I checked my online portal last night that says i owe $825
$450 alone for August
My rent is only $395
Im gonna talk to her to today if for the love of god shes in her office but what if she says she just didn't receive it? What can i do? The only proof i have is my money order receipt saying i bought one for $395

First, the rent is due BY the first, not ON the first. BY means no later than the last second of the period BEFORE the period being paid for.
Second, it is YOUR responsibility to ensure the rent is received by the management. Merely mailing a money order does not shift the responsibility to someone else.
Sending the rent Certified will give you a record of delivery by the USPS at their mail box. Return Receipt would give more evidence of it being accepted, but if they are not available when delivery is attempted, the USPS will leave a notice for them to come pick it up. Also, Certified takes as long as standard first class to arrive.
Sending it Priority Mail with Delivery Confirmation would give you a receipt with date/time delivered and it is prioritized, usually 1 to 2 days in the local area.

Send your rent by certified mail...they will be able to show the attempted delivery dates along with the dates she failed to accept. She will lose every time in court...

You can check to see if the money order was cashed. Call the company you got if from (number should be on the receipt) or check it online.

Why not have it automatically put in by the computer?

The issuer of the money order can tell you if it was cashed.Only the receiver of that money order can cash it and must provide ID when doing so.if she says she did not receive it you simply go back to the issuer and tell them.They will cancel the money order and refund your money.

tell her you know she's running a scam and threaten to take her to court with that receipt. make a copy and give it to her. tell her you're keeping the original to show "the judge". and find out where or when to give her your rent so she gets it. BTW, it may be time to move out.
