If a sitting President can't be indicted for anything, but the next President then pardons him, what's the point of it all?

The point of it all is that our democracy is threatened every time Trump and company attempt to by-pass the Constitution and the law. So we, the people, must constantly remind him and them that they can't get away with it. Even if we can't indict him, we can at least remind him that we're watching.

a sitting President has to be removed from office via impeachment before he can be indicted -- and he won't be President after he's removed

There's obviously no guarantee the next President would pardon him. Otherwise the Constitution gives congress the power to have a trial and impeach the president, which would easily happen if his crimes were not seen as a product of a political attack by his adversaries. Not being able to indict a president is a check on the balance of power between the judicial system and the executive branch.
