how would people go about being vegan and carb/gluten free? i mean vegans like to eat organically, but lots of food are processed nowadays?

not because i want to, just want to know how its done BTW

    Vegan simply means you eat nothing that comes from animals. Which includes no dairy products or eggs - if you know how those are produced, you know that they still involve killing animals. (Essentially because only females are any use - bulls don't produce milk, and male chicks don't grow up to lay eggs, so they all get killed leaving just a few to make more cows and hens.)

    Carb-free is not a good idea because we DO need some. Just learn about what different foods have in them. Gluten-free is totally unnecessary unless you have coeliac disease, which means you can't digest gluten - there seems to be a fad for thinking it's healthier, but really it isn't. There is only any need for it if you ARE coeliac.

    What you do is just avoid processed foods. Which is what we all used to do and HAD to - buy meat, fish and vegetables and know how to cook them. Or if you're vegan, just stick to vegetables and other plant products. My mother is 76 so this is what she grew up with - no convenience foods and she cooked dinner for us every day. She doesn't enjoy it but she HAD to. We're British, and she was a girl during the Second World War when food was rationed thanks to German U-boats blowing up supply ships. So the country had to learn how to make the best of what we had! It has been said that the country was never healthier because we HAD to eat more veg - we could grow those, and on the whole it was the imported things that aren't so good for you that got rationed - meat, sugar, fat.

    And she knows some shortcuts to cheap food because of it... what I never see in supermarkets is brussel tops. We ate these a lot and I remember going to the greengrocer with her and her asking for them. Have you seen a brussels sprouts plant? The sprouts grow up the side of a tall thick stem, and there are leaves at the top. That's the tops and they're just like cabbage. Eat them and you're making use of something that might be wasted.

    I actually do enjoy cooking, and if you make everything from raw ingredients, you know what you're eating. It tastes better too. Anything that is just a single type of food in cans or frozen is processed a bit, but not very much - just enough to preserve it until you get to eat it. I live on my own so I make a lot of use of frozen vegetables, and actually they're better than fresh as they are frozen very fast after picking them. I love them because they keep for months in the freezer and I can take out just what I want for my dinner. They cook in a few minutes. I have a few books of recipes for one person and just about everything in them you can make in half an hour.

    If you're vegan, the big thing is to watch out that you get your balance of nutrients. You need protein, carbs and fat, and without animal products, the problem you're going to have is where to get your protein and fat from. Beans, pulses, nuts, seeds... those are all proteinous and contain some oils too to give you some fat, so those will do it for you. Even if you're a meat-eater, it's no bad thing to keep away from meat a couple of days a week, and I like to because there are so many tasty things you can make just with veg. You do NOT need meat every day to get your protein.

    Maybe low carb because no carb is just unhealthy as our bodies rely on some carbohydrates to function properly. Many of the foods that support a healthy vegan diet are composed of carbs but i guess going low carb would be possible. If that were something I wanted to try I would consult a vegan nutrtionist.

    I was told I was gluten intolerant. Then I went vegan and ate organic products with gluten and didn't get sick. I take it there is something wrong with the non gluten free items I was eating before switching to organic.

    there are very few foods that are carb free.

    Here is a list of no carb foods...if you think you can live on vegetable oil, olives and lettuce, be my guest.

    And sweetie, ALL foods are processed...how do you think they go from growing in the ground or pasture to in the store, clean, sorted, packaged, etc. THAT is also processing.

    Heavily processed foods have a long ingredient list that reads like a science experiment. Good food does not.

    Gluten free means no wheat, rye, barley or oats in the ingredients. When having a processed product read the labels and learn the fancy trick words for those grains.

    Buying fresh foods makes it easier to eat like you describe. Cooking from scratch is fun, and allows you to eat as you desire/are able (Celiac disease for Gluten)

    You should look up the Forks Over Knives diet. They even have some cookbooks. Its a mostly strict vegetaraian diet that does not include processed foods.
