Good choral music like Jan Sandstrom's arrangement of Es Ist Ein Ros Entsprungen?
I just love that piece so much. I'm looking for something similar not so much lyrically but melodically and rhythmically.

So.... it's unknown if you like it because of the (ancient) core melody (and basic old harmonies) behind his version. Or if it is the 'chord clustering' and suspended seconds and fourths and other things going on. Lots of 'sustaining' going on, also. ...
Not knowing how familiar you are with ... everything .. try some Morten Lauridsen (whom I am fond of singing.) I picked this one, because it seems to have the most extensive playlist at one shot for Lauridsen:

Some of the choral music by American darling Eric Whitacre would probably fit the bill for you, as might pieces in a similar vein by Estonian Arvo Pärt and British composer John Tavener. Being a bit more adventurous, try music by James MacMillan and Veljo Tormis.
