I'd go with Dr. John Callaghan, who performed the first open heart surgery in Canada: http://en.wikipedia.org/wiki/John_Callaghan
There are plenty of others- I'm not 100% sure if all their achievements are in Canada, but you can go through them and do that part of the work yourself.
