Cider is fermented to clear the fruit particles out of the juice. Once the fruit particles settle to the bottom of the fermentation vessel, the fermentation is stopped to prevent the creation of alcohol.

Straight juice normally has fruit particles in it. Sometimes it is filtered to remove the large particles.
