What is "good" chocolate, vanilla, cheese?
When someone writes a recipe and says "be sure to use a good quality chocolate (semi-sweet chips)/vanilla flavoring/cheddar cheese," what do they consider to be good quality, and how are we supposed to know that? I use Nestle, McCormick, and Kraft. And my untrained taste buds are perfectly happy. What brands do you recommend and why?

Generally, they want you to use name brand ingredients, just like the ones you used. Just don't get an off-brand or store brand.

Obviously, if you are happy with the results using those products, there is no reason to change. I will say that if one time you splurge on very high quality ingredients, you *will* be able to tell the difference.
The main thing is to make sure what you use is a real, as opposed to artificially flavored, product. Artificial vanilla is truly awful, and most of us have run across fake "chocolate" coating and "processed cheese food". Obviously not going to get good results with garbage like that.
