How do you skip a string on the guitar?

Just completely not play it. It is a fast paced song that requires playing quickly like this for about a minute straight, so some of the suggestions I've heard just don't help.

The finger that is on the 7th fret should be just touching the string in between so that it is muted when you play over the three strings.

Depending on the context of the song, it is most likely muted by way of your index finger is placed gently over the B string so that it doesn't make any sound. That way you can play the two notes and you won't hear the middle one.

I normally play songs like this with my fingers, just plucking those two.
You could also mute that middle string with a finger.
