Shouldn't the Canadian Charter of Rights and Freedoms and/or the Human Rights Act prevent things like...?

a minimum age to purchase liquor, vote, gamble, purchase tobacco, drink, drive, have intercourse, view pornography, etc?

They do say that everybody should be free of discrimination based on age.

Section 1 of the Charter allows for this 'discrimination.'

    1. The Canadian Charter of Rights and Freedoms guarantees the rights and freedoms set out in it subject only to such reasonable limits prescribed by law as can be demonstrably justified in a free and democratic society.

In essence, it is reasonable to put age restrictions on the activities you outline. The justification is it is for the greater good of society, and folks below the restricted age do not have the maturity to properly engage in the restricted activity.

The government has the obligation to protect young people from harm. Charter rights are not absolute.

Yes it should. Also, Canadians are wusses for putting an escape clause in their bill of rights. That's lame.
