I just got a sack full of beets and need help figuring out what to do with 'em?
I am going to pickle some, and serve some hot buttered beets with dinner tomorrow, but there is still a whole heap of beets to use up - does anyone have any ideas?

SWEET PICKLED EGGS AND BEETS
beets
1 dozen eggs
2 cups beet juice
1 cup brown sugar
1 cup cider vinegar
1 medium onion (cut into rings)
Boil eggs, cool and shell.
Place in bowl with drained beets and onions. Bring the 2 cups of beet juice to a boil.
Reduce heat and add vinegar and brown sugar.
Allow to simmer until brown sugar has dissolved.
Pour over eggs, beets, and onions; cover and let stand in refrigerator for at least 2 days.
BEETS WITH CREAM SAUCE
2 c. sliced cooked beets
6 tbsp. butter
2 tbsp. flour
2/3 c. beet juices or chicken stock (or combination of both)
1 c. heavy cream
Salt and freshly ground pepper
Nutmeg
Place beets in a small buttered casserole. Melt butter in saucepan; add flour, stirring, and cook for 3 minutes without coloring mixture.
Remove from heat and beat in beet juice or stock, then cook until smooth and thick. Add cream, heat, and season with salt and pepper and a pinch of nutmeg. Pour over beets and heat in a 350 degree oven until the sauce is bubbly and the beets are heated through.

Beets with Chicken Soup
5 or 6 beets cut
6 slices Swiss cheese
1 can cream of chicken soup
1/4 C. milk
2 C herb seasoned stuffing mix, crushed
1/2 C melted butter
Place beets in greased 13 X 9 dish. Season with garlic powder and pepper.
Top each beets with a cheese slice
Combine soup and milk... pour over beets
Sprinkle stuffing mix over all.
Drizzle with melted butter
Bake at 350 for 50 minutes . Let sit for 5 minutes before serving.

Chicken Dumpling Pie
3 C. cooked , chopped chicken
2 cans cream of chicken soup
1 can chicken broth ( 10 1/2 oz)
15 oz cooked beets, chopped drained
2 C Bisquit mix
1 8 oz carton sour cream
1 C milk
Combine chicken and next 4 ingredients. Pour into a greased 13 X 9 pan.
Combine biscuit mix, sour cream, and milk. Stir well and pour over the chicken mixture.
Bake at 350 for 50-60 min. or until your pie is golden

Make a big batch of borscht and freeze what you don't want to eat right away. There are also a lot of great salads you can make with beets, including beet slaw. Check out http://www.foodnetwork.com/ for a bunch of great beet recipes.
When I was in Sweden, I had a fantastic dish called Pytt I Panna. It's like a course hash made from cooked meat (pork, ham, beef or all of the above), onions, potatoes and often beets. Google around for recipes if you want to try it. Sorry I don't have a particular one to recommend.

Beetroot Tarator
Use 2 large or 4 medium beetroot. Peel and chop into chunks. Put in baking dish and sprinkle with salt and olive oil. Cover with foil and roast in oven (200) for 30 minutes until soft. Leave to cool. Peel and crush two garlic cloves. Juice a lemon. Add garlic and lemon juice to beetroot. When beetroot is room temperature add four tablespoons of greek yogurt. Pulse in food processor until you have a beetroot puree. Adjust seasoning with salt and pepper to taste. You now have a wonderful dip for pita, turkish or other flat breads.
Balsamic Beetroots.
Peel and chop beetroots. Place beetroot pieces in baking dish. Sprinkle seat salt over beets. Drizzle 4-5 tablespoons of balsamic vinegar over beets and sprinkle brown sugar (or white if you don't have any brown) over beets. Cover with foil. Cook for 30 minutes in oven on 200. You can eat these warm or serve cold with bbq or salad.
Also google a recipe for borscht. Fantastic Russian beetroot soup.

I made this and set it in jars and used as a relish with cold meats.
It was great and is worth trying.
You could use fresh cooked beets after they have cooled.
1. Drain Wattie’s Chunky Beetroot and reserve liquid. Place boysenberry jelly crystals in a bowl and pour over 3/4 cup boiling water, stir to dissolve, add reserved beetroot juice and cider vinegar, stir to combine and set aside to cool for 15 minutes.
2. Mix in beetroot and pour into 2 1/2 cup capacity non-metallic mould, refrigerate overnight or until set.
