Where can I get a pickup installed on my acoustic guitar?
Would a place like Guitar Center do something like this? I tried searching their site but came up w/ nothing. Or is this something only a specialty shop would do? Also can they do it same-day?

Some Guitar Centers have a repair area and can do this kind of work. If not, ask them who they recommend in your area (I guarantee you that you won't be the first person to ask that question).
As far as "same day", it all depends on the work load at the shop. A lot of shops will let you pay a premium (called a rush charge) to jump to the front of the line.
Keep in mind that Dean Markley and Seymour Duncan make acoustic pickups that fit into the sound hole of the guitar. So, there's no real installation involved...the pickup just clips in.
