What are good games to play or crafts to do with a 8 year old?

Knitting, crochet, and cross-stitch are all crafts well within the capabilities of an 8-year-old.

Other fun crafts an 8-year-old might enjoy:

Tie-dying tee-shirts

Making suncatchers: Makit & Bakit makes metal frames into which you pour plastic "crystals," then melt them in the oven. Old discarded CDs hung from nylon monofilament and decorated with glitter, sparkles, stickers, and so on make interesting suncatchers. You can also make them with colored glue and with tissue paper plus a clear plastic lid from a yogurt container.

If you want to get a head start on Christmas ornaments, try making and decorating cinnamon-dough cutouts.

Making things--from buttons to jewelry--with polymer clay.

Then there's food. An 8-year-old is old enough to learn to cook basic things such as cookies, grilled cheese sandwiches/quesadillas, macaroni and cheese (using a melting cheese such as Velveeta), French toast, microwaved vegetables, and so on. And chocolate ice-cream sodas (vanilla ice cream, chocolate syrup, and soda water or seltzer water).
