I have a few that everyone likes and expects to receive during the holidays -- the first is a chocolate chip and the second is a melt in your mouth shortbread. With the chocolate chip recipe, I recommend using the mini chocolate chips just to ensure that there are chips in every bite. With the larger chips, getting one in every bite seems "hit or miss":

    Dishpan Cookies

2 cups brown sugar, firmly packed

    2 cups sugar

    2 teaspoons vanilla

    2 cups butter, softened

    4 eggs

4 cups all purpose white flour

    2 teaspoons baking soda

    1 teaspoon salt

    1 ½ cups oatmeal

    4 cups corn flakes

    1 package mini chocolate chips

Cream butter, add sugars and mix well. Add eggs and incorporate with vanilla. Add flour, soda and salt. Last, add oatmeal, cornflakes and chocolate chips. If you like nuts in your cookies, 1 1/2 cups of chopped nuts can also be added at this point.

Drop by spoonfuls onto greased cookie sheet. Bake 10-12 minutes at 375 degrees. Allow cookies to cool 1 minute on cookie sheet before transferring to cooling rack.

    Shortbread Cookies

    2 cups Unsalted butter, softened

    1 cup Sugar

    4 cups Flour

    ¼ teaspoon Salt

    1. Cream butter and sugar in large mixer bowl until light and fluffy. Beat in flour and salt. Knead the dough briefly until smooth. If dough is too sticky, add a bit more flour. (Dough can be refrigerated up to several days; soften slightly before shaping cookies.)

    2. Heat oven to 325℉. Have ungreased baking sheets ready.

    3. Pat half of the dough out on lightly floured surface to ½-inch thickness. Use cookie cutters to cut out desired shapes. Place cookies 2 inches apart on baking sheets. Bake until light brown on edges, 20 to 25 minutes. Cool on wire racks.

    SNICKERDOODLE COOKIES

    Ingredients

    • 1/2 cup butter, softened

    • 1 cup sugar

    • 1/4 teaspoon baking soda

    • 1/4 teaspoon cream of tartar

    • 1 large egg

    • 1/2 teaspoon vanilla

    • 1 1/2 cups all purpose flour

    • 4 Tablespoons granulated sugar

    • 1 1/2 teaspoons cinnamon

    Directions

Preheat oven to 375 degrees. In a mixing bowl, beat the butter on medium speed for 30 seconds. Add the 1 cup sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until well blended. Beat in as much flour as you can with the mixer, and stir in remaining flour. Cover with plastic wrap and chill for 1 hour.

Combine the 4 tablespoons sugar and 1 1/2 teaspoons cinnamon. Shape the dough into 1 inch balls and roll in cinnamon sugar mixture to coat. Place balls of dough 2 inches apart on an ungreased cookie sheet. Bake for 10 to 11 minutes or until edges are beautifully golden. Transfer cookies to a wire rack to cool.
