Does anyone know how to make Italian Melanzane?
I live in Italy and I love Melanzane made from eggplants. Its always severed cold and as an antipasta when I get it. But when I ask my italian friends how to make it no one will tell me because they say if you make it wrong it will kill you. Can anyone tell me how to make it. Since its eggplant season here in Italy and I would love to try to make it.

Stuffed Eggplant Bundles
Involtini di Melazane
SERVES 4 TO 6
Involtini are neat bundles of stuffed meat, fish, or vegetables. The fillings can be as varied as the cook's imagination. Eggplant works especially well as involtini, and grilling the eggplant first imparts a wonderful roasted flavor. If dried tomatoes in olive oil are not at hand, substitute thinly sliced fresh tomatoes.
1 firm eggplant (1 1/4 pounds), about 8 inches long
About 3 tablespoons Colavita™ Extra-Virgin Olive Oil
Fine sea salt to taste
1/4 cup minced fresh mint or basil
2/3 cup chopped dried tomatoes in olive oil
1/2 cup freshly grated Parmigiano-Reggiano cheese
Coarsely ground black pepper to taste
Preheat a charcoal or gas grill or the broiler. Trim off the ends of the eggplant, and stand the eggplant on end. With a sharp knife, cut lengthwise into 1/4-inch thick slices. You should have 10 to 12 slices.
Grill or broil the eggplant slices until golden brown on both sides, about 4 minutes on each side. Remove to a dish and let cool.
Preheat the oven to 350ºF. Lightly grease a baking dish. Lay the eggplant slices on a work surface and brush each slice with 1/2 teaspoon olive oil. Sprinkle with a little sea salt.
Sprinkle the mint or basil, tomatoes, and cheese evenly over the slices. Starting from a narrow end, roll each slice up like a jelly roll, and place the bundles seam side down in the baking dish. Drizzle a little olive oil over the top, and sprinkle with pepper.
Cover the dish with foil. Bake for about 20 minutes, or until the rolls are heated through. Serve immediately.

What kind of recipe do you need, exactly...? I'm a little confused since "melanzane" is not a recipe, it's just Italian for "eggplants"...
Edit:
Perhaps they look brown (plain eggplants, not used as an ingrdient) and are botteld with oil?
That's the more common way to serve eggplants as an antipasto (appetizer), although not the only one, of course.

well.. i didn`t knew melanzana could kill you :))) it`s not possible... i am eating melanzana salad.. and fried.. and.. in diffrent ways... since i`am littled.. and it didn`t killed me..
i don`t know how you eat them where you eat them... but try this:
1. peal the melanzana :D slice it in slices thick like your finger , fry them in olive oil , remove them when ready salt them and put fine sliced garlig over them , then another row of fried melanzane. This is a little bit to oily.. beause they absorb a lot of oil... but they are soooooo good.
If it`s too oily foy your taste , after you fry them put in a wok sliced tomatoes and sliced peppers cook them a little bit and when put the fryed melanzane over.. stir 2-3 times and it`s ready... alsooo delicious!!!!!!!! with a lot of garlig..
For the salad with mayonnaise... it`s a little bit complicated... but if you want it...
