MILLION DOLLAR FUDGE
1/2 c. butter
4 1/2 c. sugar
1 (12 fl. oz.) can evaporated milk
3 (12 oz.) pkgs. Baker's real semi-sweet chocolate chips
1 (7 oz.) jar Kraft marshmallow creme
3 c. chopped nuts
1 tsp. salt
1 tsp. vanilla
Bring butter, sugar and milk to a full rolling boil in heavy 4 quart saucepan, stirring constantly.
Boil 5 minutes over medium heat, stirring constantly to prevent scorching.
Remove from heat. Gradually stir in chocolate chips until melted. Add remaining ingredients; beat until well blended. Pour into greased 13x9 inch pan. Cool, cut into squares.
Makes 6 pounds of fudge.
If you don't like nuts leave them out.

the BEST fudge I've ever had is called Fantasy Fudge. The recipe is on the jars of Marshmallow Creme in the grocery store....it has been around for over 40 years...it is a winner.

Here's a recipe for you. Enjoy and have a great day,
3 cups semi-sweet chocolate chips (use a fairly good quality chip)
1 (14 ounce) can sweetened condensed milk
1 cup walnuts
1 1/2 teaspoons vanilla extract
Over low heat, melt the chips in the sweetened condensed milk.
Remove from the heat and stir in the nuts and vanilla.
Spread evenly into an aluminum foil lined 8x8 or 9x9 pan.
Chill and pop out of pan.
Peel off foil and cut into 1-inch squares.

Here's a really easy one from Alton Brown, I've made it three times now:
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar
In a large bowl covered with plastic wrap (and two slits cut in with a knife), microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

I haven't made this one yet, but the reviews are awesome for it and it seems it's very easy to make too:
5-Minute Fudge Wreath (Rachael Ray)
1 (12-ounce) bag semisweet chocolate morsels
9 ounces (3/4 of a 12-ounce bag) butterscotch morsels
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 (8-ounce) can walnut halves
1/2 cup (a couple of handfuls) currants
8-inch cake pan, lightly greased with softened butter
Candied cherries, red and green, for garnish, optional
Place a heavy pot on the stove and preheat it over low heat. Add chips and milk and stir until chips are melted and milk combined. Save the empty condensed milk can. Stir in vanilla and remove fudge from heat. Add nuts and currants and stir in immediately.
Cover empty condensed milk can with plastic food wrap and center it in the greased cake pan. Spoon fudge into pan around can, making sure to recenter can if it drifts.
The fudge will set up almost immediately. Garnish can only be added in the first minute or 2 the fudge is in the pan, so work quickly. Decorate your wreath with "holly" made from cut candied red and green cherries. A wreath left plain can be garnished with a pretty fabric bow when serving. Chill covered in the refrigerator and slice fudge very thin when ready to serve, a little goes a long way.

Coffee and Walnut Fudge ==================== 1.5 lbs caster sugar 8 fl oz evaporated milk 8 fl oz water 4 oz butter 1.5 tsp instant coffee powder 2oz shelled walnuts, roughly chopped. 1. Butter or oil a tin measuring 8in x 5.5in x 1 in. 2. Put all ingredients except the coffee and walnuts into a large heavy based saucepan. 3. Blend the coffee with 1 tbsp water and add to the pan. 4. Stir over a low heat until the sugar is dissolved. 5. Bring to the boil and boil gently to 240f. Stir during the cooking to prevent sticking. 6.Remove from the heat and add the warmed nuts. 7. Place the pan on a cool surface and beat the mixture with a wooden spoon until thick and creamy. 8. When the mixture shows signs of setting, pour it into the tin. 9. Leave until nearly cold and mark into squares. 10. When firm, cut with a sharp knife, with a sawing motion. Makes approx 2lbs.

Super easy fudge
1 cup chocolate chips
1 cup butterscotch chips
1 (14-ounce) can sweetened condensed milk
1 teaspoon pure vanilla extract
1 cup pecans (any type of nut will work)
Butter a 9 by 9-inch baking dish
Melt chocolate chips, butterscotch chips, and condensed milk in double boiler on medium heat. Once smooth remove from heat. Add vanilla and nuts. Scoop into baking dish and chill in refrigerator until set for approximately 10 minutes.

EASIEST EVER FUDGE (PEANUT BUTTER OR CHOCOLATE) -------- Even I can make it!!!!
1 lb. margarine
18 oz. penaut butter
2 lbs conf sugar
Melt margarine and add peanut butter. Remove from heat and stir until peanut butter is completely melted. Add 1/2 of sugar and mix then add rest and mix completely. Put in a 13 x 9 cake pan, flatten out with hands. Cool for 1/2 hour and put in refrigerator. If you want chocolate, substitute a 12 oz plkg chips for the peanut butter.

I use the recipe on the back of the Kraft Marshmallow Creme jar, you can make it in PB or Chocolate, Butterscotch, what ever chips you want to put in, I think the recipe is actually for PB but you can sub any other flavor.
I add mint extract to my chocolate and creme de mint chips (the green ones) melted on top, for grasshopper fudge.
Yumm. Off to the store........
