  • Steamed Fish w/Ginger?

Most methods and recipes of steaming fish call for either marinating the fish before steaming or adding the marinade to the sauce after. I want to steam the fish with thin slices of ginger on top and in the cavity (maybe some garlic too), so hopefully the juice will soak in during cooking. Will this have an effect on the texture of the fish or cooking time? I have heard that a "dry steam" works best.

  • How do you stop a close friend from verbally abusing those he is close with?

I have a close friend who has problems getting girls. He is 31, still a virgin and has maybe kissed one girl. He invests all his emotions into finding a girl and our friends ride the highs and lows along with him. When he's happy, he's easy to get along with, when he's not, he lashes out at people with snide remarks and nasty comments under his breath. He has always felt a rivalry with me, and therefore I receive most of his displaced anger. Normally, I keep quiet and hope it passes, but his last bitter stage lasted 8-12 mo. and alienated almost everyone (luckily I wasn't in town). I've taken different approaches to this over the years, but nothing seems to work. Keeping quiet makes him feel like I'm scared of him and his bullying increases; retaliating makes him feel worse; reasoning with him is interpreted as weakness and he bullies me even more. I can't ditch him because it means leaving my other friends behind, plus we are all like brothers. How do I make it stop?
